Gabrielle Thoreau
Gabrielle Thoreau has professional experience in food and hospitality spanning over three and a half decades including hands on experience in corporate and private catering and restaurant management. Gabrielle is driven by a passion for quality and safety in all aspects of food production and service.
After returning in 2010 from a teaching post in the pacific where she shared her extensive knowledge and experience with students from Papua New Guinea, Vanuatu, Kiribati, and the Solomons, Gabrielle focused on aged care.
As a food safety consultant and trainer, Gabrielle is on a mission to inspire and implement safe food practices, on behalf of those who need us to care.
Gabrielle provides a range of services assisting aged care facilities so they can meet their food safety obligations to their residents.
These services include:
HACCP Programs:- Develop policies, procedures and records specifically customised to suit your facility's (including kitchen and staff) requirements.
Food Safety Manual Review:- Aged care facilities have a legal obligation to review their food safety program's manual at least once a year.
Gap Analysis:- Review of the facility's food safety program to ensure that it meets legal requirements and make recommendations for improvement.
Internal Audits:- Review of the system to ensure it is functioning as intended and set out in the program.
Training Needs Analysis:- Assess the skills, knowledge and attitudes of staff, advising where they require improvement to align with safe food handling and legal obligations where necessary.
Training:- Induction training for new employees or if new practices are implemented. Customised training programs. Refresher courses in food safety. Conflict resolution workshops.
Food Safety Team:- Assistance in establishing effective food safety meetings. Participation in the food safety team as a resource person.
Help Desk Service:- Ongoing support is provided on all food safety issues for clients.

Christine Borthwick B.Sc, Dip. Nutrition and Dietetics (Sydney), Accredited Practising Dietitian, Accredited Nutritionist.
Christine is an Accredited Dietitian and Nutritionist with over 30 years experience including 20 years in the areas of gerontology and rehabilitation. She has a B.Sc. majoring in microbiology and biochemistry and has maintained an active involvement in food services issues throughout her career.
